Ingredients:

For the Base:

  • 125g gluten-free plain flour
  • 40g desiccated coconut
  • 55g caster sugar
  • 125g unsalted butter, melted

For the Caramel:

  • 100g unsalted butter
  • 100g brown sugar
  • 2 tablespoons golden syrup
  • 400g can of sweetened condensed milk

  • 150g dark chocolate, broken into pieces
  • 2 tablespoons coconut oil

Instructions:

  1. Preheat your oven to 180°C (160°C fan-forced). Line a 20cm square baking tin with non-stick baking paper.

  2. Mix the gluten-free flour, desiccated coconut, and caster sugar in a bowl. Add the melted butter and mix until combined.

  3. Press the mixture into the bottom of the prepared tin and smooth the surface with the back of a spoon. Bake for 15-20 minutes, or until golden. Remove from the oven and allow to cool slightly.
